I'm obsessed with making coconut-milk pudding recently.
This one is hands down my favorite and the easiest to make!
It literally only has 4 ingredients (see links below for sources):
4 oz. Full Fat Coconut-Milk/Cream
3 tbsps of Raw Unsweetened Cacao Powder
1 tsp vanilla extract
Stevia (sweeten to preferred taste)
Mix all together, stick it in the fridge for 30-60 min. and voala!
Add chia seeds to thicken or for preferred texture. I often experiment with chia seed puddings, too, and will probably post that next.
This is the perfect dessert, doesn't spike insulin, is DELICIOUS and filling, anddddd I feel like I can live off of these puddings alone! Hmm..
